A couple of weeks ago I got the opportunity to photograph the Slagel Family Farm in southern Illinois for Time Out Chicago magazine.  The owner and operator of the farm is named Louis John; a very knowledgeable 24 year old farmer.  He supplies pork, beef, veal and chicken to many trendy restaurants in Chicago including some of my favs: Lula, Nightwood, Avec, Publican, Bristol and Longman and Eagle.  I felt very fortunate to have been able to visit a free- range livestock family farm.  To learn more about Louis John Slagel, feel free to read all about it in Julia Kramer’s article about humanitarian veal in Time Out Chicago.  http://chicago.timeout.com/articles/restaurants-bars/84813/how-humane-is-humane-veal
