My friends and family are a bit concerned about my new obsession with Quinoa. I’ve probably consumed more quinoa in the last few months than I have rice in my entire life.  Do the math- thats loads of quinoa.  I’ve come up with an interesting recipe for red quinoa that is just so colorful and delicious.  Felt it was good enough to share.  Here is the recipe:

1/2 cup Quinoa

handful of Cilantro (stems and leaves chopped)

1 Can Black Beans (rinsed)

1 can Corn (rinsed)

1/2 Red Onion (chopped)

3 tbsp Lime Juice

1 tbsp Kosher Salt

Mix together, and season to taste.  Enjoy~!
