After running loads of work errands and working out at the gym I was starving for something deliciously healthy and easy to make for lunch.  I had roasted some beets a few days ago and I had some left over quinoa from last nights dinner.  So I piled up “Big Salad” and boy oh boy did it satisfy my quinoa fix for the day.


1/2 cup cubed roasted beets

1/2 cup cilantro chopped

1 tbsp minced fresh ginger

1/2 cup red onion chopped

1/2 cup cooked quinoa


2/3 cup balsamic vinegar

1/4 cup olive oil

1 tbsp honey
